  • Duration: 3 years
  • Shortening of the training period to 2.5 years possible, depending on performance in the company and vocational school
  • Training Location: The training takes place in the company and in block lessons at the vocational school.
  • First training year: Justus-von-Liebig School Mannheim
  • Second and third training year: Vocational School for the Hotel and Restaurant Industry VS-Villingen

What tasks await me in this profession?

  • Kitchen work: The perfect starter, a great selection of main courses and dessert to finish with - as a hotel specialist (m/f/d) you not only know the menu by heart, but also help with the preparation in the kitchen. Of course, you have to follow the relevant hygiene regulations.
  • Restaurant work: You advise guests on choosing what to eat, recommend the dish of the day and the matching wine. You also serve the dishes, bring the bill and take the payment. If the hotel has a terrace or a beer garden, you can also take care of the guests there. You ensure that every guest is provided for and that the outdoor facilities are always in a presentable state.
  • Banquet: Many conferences take place in hotels with mostly business guests. As part of the banquet department, you ensure that the conference rooms are perfectly prepared according to the wishes of the clients and provide those taking part with delicacies and fresh drinks during breaks.
  • Housekeeping: Dusting, re-covering the beds and equipping the bathroom with hygiene articles - also cleaning work, better known as housekeeping, is part of the everyday work of a hotel specialist (m/f/d). Among other things, you must ensure that the rooms are clean before new guests move in.
  • Reception: Perform check-in, mention breakfast times and explain how to get to the room - typical tasks of a hotel specialist (m/f/d) if you are assigned to reception. In addition, you must be familiar with the hotel software, where the room reservations are stored and also how to answer telephone inquiries.
  • In the office: Have reviews of the hotel been given, on which a comment is required? Behind the scenes of the hotel you have to handle organisational and administrative tasks. This also includes accounting and human resource management.

Where do I spend my working day?

The departments listed above are all located in our hotels. There you will work for a fixed period in the respective teams of the individual departments.

Hotel Specialist (m/f/d) with additional qualification in Hotel Management

  • Duration: 3 years
  • No shortening of the training period possible
  • Precondition: Abitur or subject-specific higher education entrance qualification
  • Training location: The training takes place in the company and in block lessons at the vocational school, every three years at the state vocational school for the hotel and restaurant industry VS-Villingen.

Differences from the classic hotel specialist (m/f/d)
The in-company training is similar. The following subjects are also taught at the school:

  • professional foreign language Spanish
  • professional foreign language French
  • hospitality management

Cook (m/f/d)

  • Duration: 3 years
  • Shortening of the training period to 2.5 years possible, depending on performance in the company and vocational school
  • Training location: The training takes place in the company and in block lessons at the vocational school.
  • First training year: Justus-von-Liebig School, Mannheim
  • Second and third training year: Johann-Georg-Doertenbach-Schule State vocational school for hotel and restaurant occupations, Calw

What tasks await me in this profession?

  • Create menus: The cook (m/f/d) prepares the menu even before going anywhere near the stove. You not only pay attention to a varied diet, but also consider the current season and special customer wishes. Asparagus, for example, is typically on the menu in spring, while mushrooms are more common in autumn. As a cook (m/f/d) you also have to keep in mind the expectations of many different groups of persons - from diabetics to vegetarians.
  • Store ingredients: As a cook (m/f/d) you also need to know where and how the various ingredients are stored - potatoes, for example, dark and cool, raw meat never together with other foodstuffs because of the risk of salmonella. This is also stipulated in the hygiene regulations which must be observed in restaurants. A regular control of the stock for durability of the food is also part of your duties.
  • Prepare dishes: The range of different dishes that you prepare as a cook (m/f/d) is huge. This is why employees in larger kitchens often specialise in specific areas: While one cook will cut the meat and continue to prepare it, another will be cleaning and the salad. Another one again will take care of the side dishes. Kitchen appliances make work easier.
  • Dinner arrangements: The dishes should not only taste good, but also look appealing. The cook (m/f/d) pays attention to this when arranging the food on the plate. You will also check that the setting is complete and in line with the order before the service personnel and the food make their way to the guest.
  • Creating a workflow plan and supervising the personnel: As a cook (m/f/d), depending on the position, you also plan the deployment of personnel and the workflow. As a chef, this includes assigning, instructing and supervising subordinates, such as kitchen assistants.
  • Cleaning and tidying the workplace: At the end of the working day, cleaning is on the agenda - ingredients which are not needed have to be packed away, kitchen utensils cleaned and waste disposed of. All this is done in compliance with strict hygiene regulations.
